This was a Red Velvet cake that many have talked about, done and ate a decade ago. I'm not ashamed to confess I'm always a late bloomer . I always wait for a special occasion to try new recipe. So this year Father's day, I for the first time made a Red Velvet cake for my husband whom I skipped baking his birthday cake. Recipe adapted fron Joyofbaking was super delicious. The cream cheese and dessicated coconut blends well with the moist cake which has a subtle taste of cocoa.. yummmyyyy!!!
